The genetic makeup of the gut microbiota governs the ability of microbes to metabolize diet-derived compounds within the gut that can affect host metabolism and health. Thus,\u00a0the overarching goal of our lab is to understand the relationship between diet, the gut microbiome,\u00a0the metabolites it produces, and the potential for these metabolites to influence\u00a0inflammation, oxidation, and overall metabolism of the human host.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">The Soils to Society project\u00a0is\u00a0evaluating varieties and growing conditions that may affect the nutritional composition of quinoa. Quinoa is a staple crop in South America which may provide a viable product for food producers in the United States. We will be comparing different cultivars of quinoa, altering the growing conditions of varieties of quinoa, and preparation methods in the changes that take place within the microbiome.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">We will be utilizing an in vitro model to study this relationship that mimics the anaerobic environment of the human digestive system.\u00a0In order to\u00a0do this,\u00a0we will utilize human fecal samples combined with different food products to determine the differential effects of these foods on the genetic makeup of the\u00a0microbes of human feces\u00a0and on the compounds these microbes\u00a0metabolize.\u00a0These combinations are\u00a0slurried\u00a0together and introduced into the anaerobic chamber.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">Our lab is recruiting\u00a024\u00a0volunteers to provide human stool samples\u00a0for this purpose. Participants must be 18-50 years old,\u00a0<\/span><span data-contrast=\"auto\">BMI\u00a0of at least\u00a020 kg\/m<\/span><span data-contrast=\"auto\">2<\/span><span data-contrast=\"auto\">,\u00a0and in good metabolic and digestive health and\u00a0<\/span><span data-contrast=\"auto\">not<\/span><span data-contrast=\"auto\">\u00a0to have\u00a0consumed quinoa in the previous 7 days.\u00a0We are only asking for a stool sample from a normal bowel movement during your normal diet.\u00a0The\u00a0compensation for providing a viable stool sample is a $40 gift card to\u00a0Safeway, Walmart, Yoke\u2019s Fresh Market, Fred Meyer, or Rosauers Supermarkets<\/span><span data-contrast=\"auto\">.<\/span><span data-contrast=\"auto\">\u00a0Certain diseases and conditions may disqualify you from participation including\u00a0<\/span><span data-contrast=\"auto\">pregnancy,<\/span><span data-contrast=\"auto\">\u00a0cardiovascular disease, type 2 diabetes,\u00a0a history of certain\u00a0cancers, inflammatory bowel disease\u00a0(Crohn\u2019s disease\u00a0<\/span><span data-contrast=\"auto\">and ulcerative colitis<\/span><span data-contrast=\"auto\">), celiac and non-celiac gluten intolerance or if you have had bariatric surgery,\u00a0<\/span><span data-contrast=\"auto\">suspected or known strictures, fistulas or physiological\/mechanical GI obstruction,\u00a0use nicotine containing products\u00a0in the previous 6 months,<\/span><span data-contrast=\"auto\">\u00a0or if you have taken antibiotics in the previous 90 days.\u00a0If you are interested in participating, please complete\u00a0<\/span><a href=\"https:\/\/wsu.co1.qualtrics.com\/jfe\/form\/SV_9viLS5EhqzbSs4u\"><span data-contrast=\"none\">this application<\/span><\/a><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"auto\">to determine your initial eligibility.
